Pistachio-Cranberry Biscotti

1 box of French Vanilla Cake Mix (Duncan Hines)

1 cup flour

½ cup lightly salted butter, melted

2 large eggs

2 tsp. orange zest

½ cup chopped pistachios, toasted

½ cup craisins


Heat oven to 350°

In bowl with mixer on low combine 1st 5 ingredients, 30 seconds.

Increase speed to medium.  Beat 1 minute more.

Stir in chopped pistachios & craisins.

Using floured hands, shape dough into 2 (13x3x1/2) inch logs.

Place on parchment paper on cookie sheet with a little space in between them.

Bake 35 minutes.

Remove from oven, let cool 10 minutes.

Using serrated knife, cut diagonally into 1 inch slices.

Place cookies on their sides, bake 10 minutes more.

Turn off oven and leave cookies in oven 25 minutes more.

Then, cool completely.
