Los Patios Cheese Soup by Maureen Maki

1/2 stick butter

3 chopped green onions

3 stalks celery chopped with some leaves

2 grated carrots

2 cans chicken broth

3 cans potato soup

1 soup can water

8 oz sharp cheddar cheese

Sprinkle of hot pepper

8 oz sour cream


Melt butter over low heat and sauté onions, celery and carrots. Add chicken broth and water. Cover and simmer 30 minutes. Add potato soup, cheese, pepper. Stir in sour cream. Simmer 15 minutes.

Makes 10 cups
